August Newsletter | Comfort Food for Busy Days

Hey guys!

Can you believe it’s already August?

Summer may be winding down, but life certainly isn’t slowing down. Whether you’re getting kids ready for school, juggling work, or just trying to get a homemade meal on the table after a long day, this is the perfect time to lean into recipes that are quick, comforting, and full of flavor.

Here at Vanessa’s Meals, Messes & Magic, my goal has always been to show that you don’t need fancy ingredients or hours in the kitchen to make meals your family will love. Sometimes the best recipes are the ones that become part of your weekly routine.

So grab your favorite drink, pull up a chair, and let’s cook something wonderful together.

⏱️ Vanessa’s 5-Minute Kitchen Fix

Keep Herbs Fresh Longer

Fresh herbs can wilt quickly, but here’s an easy trick.

Trim the stems and place them in a small glass with about an inch of water, just like a bouquet of flowers.

Loosely cover the herbs with a plastic produce bag and refrigerate (leave basil on the counter instead).

You’ll often get another week or more of freshness—and your meals will taste even better.

Brown Your Ground Beef Like a Pro

One of the easiest ways to build flavor is to let your ground beef actually brown instead of just turning gray.

Here’s how:

• Use a large skillet so the meat has room.
• Let it sit for a minute or two before stirring.
• Break it into larger chunks first, then crumble it as it cooks.
• Drain only if necessary.

That little bit of caramelization adds rich flavor to everything from Sloppy Joes and Chili to Salisbury Steak and tacos.

It’s a simple trick that makes a big difference.

⭐ Featured Recipe of the Month

Old-Fashioned Salisbury Steak

If you grew up enjoying Salisbury steak at home—or maybe even in the school cafeteria—this recipe brings back all those comforting memories with a homemade twist.

Juicy beef patties are smothered in a rich mushroom and onion gravy that’s perfect over creamy mashed potatoes or buttered egg noodles.

It’s nostalgic comfort food made simple enough for a busy weeknight.

Busy-Life Shortcut:

Make a double batch! Freeze the cooked patties and gravy separately so dinner is almost ready on your busiest evenings.

🌽 What’s Fresh This August?

August is one of my favorite months for colorful produce.

This month, keep an eye out for:

🍅 Vine-ripened tomatoes

🌽 Sweet corn

🍑 Peaches

🥒 Cucumbers

🫑 Bell peppers

🌿 Fresh basil

They’re perfect for adding fresh flavor to hearty comfort-food meals without a lot of extra work.

💛 A Little Encouragement This Month

Life gets busy.

Some nights dinner goes exactly as planned.

Other nights you realize halfway through cooking that you forgot to thaw the meat or you’re missing an ingredient.

That’s okay.

Cooking isn’t about perfection.

It’s about showing up for yourself and the people you love.

Every recipe you try builds confidence.

Every meal teaches you something new.

And every little success makes the next one easier.

So don’t be afraid to experiment.

Laugh at the messes.

Celebrate the little victories.

Because the best memories usually aren’t made from perfect meals—they’re made around the table with the people sharing them.

Thank you for letting me be part of your kitchen each month.

Until next time…

❤️ Vanessa
